Madame Brasserie’s entire menu is designed to minimize its carbon footprint.
The restaurant is run by Michelin-starred chef Thierry Marx.
“Here is a dish of leeks that comes from just 50 kilometers away, seasonal leeks, we simply cooked it in its own juices and then we wrapped it in paper, as a leek is 80% water on average. We cook it in its own juices and we’re going to finish it simply by passing it over a flame.”
